My favorite lunch is a big salad (variety of lettuce, green pepper, cucumber, onion, carrot, edamame, nuts, etc.) with hard-boiled egg or tuna or grilled chicken.
ReplyDeleteI mass produce salads on Sunday night for the entire week in stackable tupperware. Best salads include GREENS (remember: the darker...the more more nutritious...so spinach is BEST). I layer a proten (generally roasted chicken or hard boiled eggs). I make enough eggs/chicken for the entire week as well on Sunday. I ALWAYS use homemade dressing (olive oil, dijon mustard, vinegar, a dash of salt/pepper and a smidge of minced onion). I chop in whatever other veggies that are in the fridge! Peggy H. My favorite lunch is a nice salad with chicken breast, lots of veggies and a balsamic dressing. With that I like some yogurt and some fresh cut up fruit that I almost always have at home for the sole purpose to bring in my lunch. Its really healthy, it satisfies my cravings for sweets and it is way cheaper to bring your own that to buy it at work!
ReplyDeleteI just had this sandwich where it was avocado, mozzarella, and tomato and then grilled with whole wheat bread. I had it with some fruit and it was delicious!
ReplyDeleteMy favorite lunch is leftovers from the previous nights supper, but an easy lunch when I have no leftovers available is a quick stroll through the New Pioneer Coop on my way to work. I pick up a section smoked trout, an organic cucumber and pepper for my veggies then an organic apple or berries for my fruit. Once in a while I will pick up some organic cheese sticks as well. If you are a smart shopper you may already have the veggies, fruit and such in your home saving you a morning stop at the store. They often have sardines, oysters or tuna tins on sale.

My favorite lunch is a grilled chicken sandwich with a spinach salad. I love the Ken's light raspberry walnut dressing!!

Protein (usually chicken) and veggies. Tons of options - salad with chicken breast and veggies, grilled/baked chicken breast with roasted/steamed veggies. ReplyDeleteA go-to since childhood: a half-sandwich on multi-grain bread with crunchy peanut butter and raspberry preserves, and a honeycrisp apple. Protein and fiber - sweet and salty!

Julia K - The Mighty JANS (Jane Addams Never Settled) leftovers from the night before -- I portion out what we had into lunch sized containers, sending one with my husband and keeping the other for myself. Generally, I use recipes I find that have fewer than 8 Weight Watchers Smart Points, or that come from SparkRecipes.

My go to lunch is either a peanut butter sandwhich or a protein bar. I like to add in carots, celery and brocilli.

My favorite healthy lunch is a small salad with romaine lettuce, spinach, and carrots with a vinaigrette. And a sandwich with whole wheat bread, hummus, slices of zucchini, and cooked bell pepper. Finally, a mandarin orange or a small container of yogurt.

ReplyDeleteI like to eat a packet of tuna and an avocado together! It sounds weird, but it is really good! Protein, good fat, and Omega 3's!
I like to eat a salad with cauliflower, carrots & cucumber with a mix of sunflower seeds and dried cranberries. Add a side of cottage cheese and some fresh fruit!
