How do you snack savvy?

With so many delicious choices available, what do you choose? Apples and peanut butter? A great no-bake protein bar? Or maybe homemade granola?
Tell us what your favorite healthy snack (include the recipe link if you have it) and be eligible to win one of four UI Wellness lunch boxes. All entries must be submitted by midnight, Sunday, February 16th, 2014.

  11. One of my favorite snacks is a Weight Watchers muffin recipe I've had for quite a long time. Can't remember the "points," but it's either 2 or 3 "points" (may be 3 in the new Points Plus system. Or, that and a cup of coffee in the morning gets me going!

    servings | 4
    Ingredients

    4 cup rhubarb (3/4 cup)
    1/4 cup water
    1/2 oz Jell-O Sugar-Free Strawberry

    Directions

    Chop rhubarb and combine in large pan with water. Cook over medium heat stirring often until rhubarb becomes soft Add dry gelatin mixing well to combine. Remove from heat. Chill until ready to serve.

    Special Notes

    Use 4 serving size of sugar-free strawberry gelatin.

    Top with 1 T. fat-free Cool Whip.

    1 cup Koshi - Almond Honey Flax Cereal
    1 cup Walnuts
    1 cup Dried Fruit
    1 cup Almond Slivers
    2 tablespoons Sun Flower Seeds

  34. I keep a small red basket with organic produce at my desk. Generally it has apples, banana, orange, carrots, celery, raw almonds, pecans, and greens. Sometimes I bring in a green smoothie generally made with organic Kale, berries, cinnamon, and spirulina.

  36. Because I LOVE cake!

    Mix one box angel food cake mix with one box of your favorite cake mix. Add 3 tablespoons of mixture to a large mug mix in two tablespoons of water heat in microwave for 1 minute.

  37. Ingredients
    2 bananas
    1 1/2 oz - special dark chocolate pieces(about 1/3 cup)

    Directions
    Peel bananas. Slice bananas into 1/2-inch-thick pieces. Line baking sheet with waxed paper. Arrange banana pieces close together in a single layer on prepared baking sheet.
    In a heavy small saucepan, melt chocolate over low heat. Place melted chocolate in small resealable plastic bag. Seal bag and snip off a tiny corner. Drizzle chocolate over banana slices. Cover and freeze for 1 to 2 hours or until frozen.
    Divide banana pieces among four freezer containers or small resealable freezer bags. Freeze for up to 3 days

  39. My favorite snack is very simple it is a cauliflower salad.

    1/2 head of cauliflower chopped into small pieces
    10 grape tomatoes or cherry which ever you have sliced in half
    olive oil
    1/2 fresh lemon juice
    salt to taste
    Put cauliflower and tomatoes in a bowl on that you can put a lid on and shake. sqeeze the lemon in first and then add some olive oil. Taste it before you add the salt to see if you need more olive oil. Depending on how much you like lemon. Refridgerate for 1 hour or more. You can eat it right away but if you want it to soak up the lemon and oil I would refrigerate. This can be made the night before too. It is awesome.

  56. Have minipeppers in the work fridge, it is a quick and healthy snack. Pick up a bilk bag of natural almonds spike with sea salt roasted almonds and disperse in baggies. An easy snack to have while on the run.
